  2. 1 cup onion, chopped
  3. 1 cup bell pepper, diced
  4. 1.5 pound ground bison
  5. 2 cloves garlic, minced
  6. 2 tbsp chili powder
  7. 1 tsp ground cumin
  8. 0.5 tsp smoked paprika
  9. 0.5 tsp salt
  10. 0.3 tsp black pepper
  11. 2 can diced tomatoes, undrained
  12. 2 cup beef broth
  13. 2 can kidney beans, drained and rinsed
  14. 0.5 cup cheddar cheese, shredded
  15. 0.3 cup cilantro, chopped

Steps

  1. Heat oil in a large pot over medium heat; sauté onion and bell pepper until softened.
  2. Add ground bison and cook until browned, breaking up chunks.
  3. Stir in garlic and spices; cook 1 minute until fragrant.
  4. Pour in diced tomatoes, beef broth, and kidney beans; bring to a boil.
  5. Reduce heat to low, cover, and simmer for 90 minutes, stirring occasionally.
  6. Garnish with cheddar and cilantro before serving.
